    Green Beans and Sausage

    This is a simple dish that has saved my sanity too many times to count. It is easy and delicious!

    Ingredients
      

    • 32 ounces frozen green beans
    • 16 ounces chicken, beef, or pork sausage, sliced smoked is our preference
    • 2 cups chicken or vegetable broth
    • salt & pepper to taste
    • 1/2 onion, diced or sliced optional
    • 1 can diced tomatoes optional – if used, can cut broth down to 1 cup

    Equipment

    • 1 large pot or saucepan

    Method
     

    1. Place all ingredients in your pot and stir.
    2. Cover pot with the lid. Cook over medium heat for 20 – 30 minutes. Stir occasionally to ensure all cooks evenly.
    3. Before serving, check to see that your sausage is fully cooked through (if you use smoked sausage you won't need this step as it will already be cooked).
      Ladel into soup bowls and serve.

    Notes

    You and your brothers love this one, and I found it particularly good when trying to get dinner on the table quickly for two hungry teenaged boys. It’s good to have the frozen green beans, smoked sausage and a can of tomatoes / broth on hand for such emergencies!
    This is a good dinner all by itself (especially when it is chilly outside) but is even better when served with a crusty bread to soak up all the broth. We liked to eat it with the broth, but you could easily strain out the broth and serve alongside mashed potatoes for an even heartier meal.
    While I wrote this as a stove-top recipe, you can also make this in a slow cooker or insta-pot.
    You can easily use fresh green beans and/or fresh tomatoes and you can substitute stock or bone broth for the regular broth. You can use any sausage you prefer (just make sure it is fully cooked before serving) as well. I like to use smoked sausage because it adds a wonderful flavor to the broth, is already cooked, and can be easily sliced before adding to the pot. You could use Italian sausage by removing it from its casing and then breaking the cooked sausage meat apart before serving. That will lend it’s own flavor to the dish. You can also add vegetables, seasonings, etc. That’s what I like so much about this one – it is very flexible so you can use what you have and what you prefer. Don’t be afraid to make it your own!
